Brew it right
Dark roasts give up their flavor fast. Slightly cooler water keeps the cup bold, not bitter.
French press
Best matchChoose whole bean- Ratio
- 1:15 · 30 g coffee to 450 g water (about 15 oz)
- Grind
- Coarse, like sea salt
- Water
- 195°F (90°C)
- Time
- 4 minutes, then press slowly
Pour it all off once pressed. Coffee left sitting on the grounds keeps extracting and turns harsh.
Drip machine
- Ratio
- 1:16 · about 2 level tablespoons per 6 oz of water
- Grind
- Medium, like coarse sand
- Water
- Filtered, at the machine’s setting
- Time
- 4–6 minutes
Rinse the carafe and basket between pots. Old coffee oils go stale and turn a good cup bitter.
Cold brew
Choose whole bean- Ratio
- 1:8 concentrate · 100 g coffee to 800 g water
- Grind
- Coarse, like sea salt
- Water
- Cold or room temperature
- Time
- 12–18 hours in the fridge, then strain
Cut the concentrate 1:1 with water or milk over ice. Best within a week, kept cold.
